This recipe is very beloved by health foodies: no sugar, no gluten and no artificial flavours. It keeps the blood sugar level balanced and delivers enough energy to combat these long winter days (a healthy balance of carbs, proteins and fats).
Ingredients for two portions
- 2 bananas
- 4 eggs
- 100 g coconut powder
- vanilla bean (only use the seeds: slice the vanilla bean in two and scrape the seeds out with the tip of a knife)
It is very easy: just put all of the ingredients in a blender and blend until you get a smooth mixture. If you don’t have a blender, just mash the bananas and gradually add the eggs, coco powder and vanilla bean seeds.
Just as making normal pancakes, put some butter into a pan, once melted add some tablespoons of the smooth mixture. Be careful when turning, these pancakes tend to break sometimes.
Pack some into a bag and eat them as a healthy snack at work!
